Fennel, Artichoke and Grapefruit Salad Recipe

Ingredients

• 1 lemon, zested and juiced
• 2 tablespoons Champagne vinegar
• 1 tablespoon whole-grain Dijon mustard
• 1/4 clove garlic, finely grated
• 1/3 cup extra-virgin olive oil
• Maldon sea salt and freshly ground black pepper
• 1 lemon
• 1 large artichoke
• 1 small fennel
• 4 tablespoons lemon Dijon vinaigrette, plus more to taste (recipe above)
• 1 grapefruit
• 1 tablespoon fresh parsley leaves
• 1 avocado, peeled, pitted and thinly sliced
• 1½ ounces ricotta salata, sliced and broken into shards
