Ingredients

• 1 tsp. olive oil
• 1/2 c celery, chopped
• 1/2 c onion, chopped
• 1/2 c red bell pepper, chopped
• 1/2 c carrots, chopped
• 1/2 tsp. fresh ginger root, minced
• sea salt and pepper, to taste
• 2 eggs, beaten
• 1 c cornstarch
• 1 (14 ounce) package firm tofu, drained and cubed
• 1/8 c vegetable oil
• 3/4 c peanut sauce of your choice
• 1/4 c peanuts, roughly chopped
