  • 2 cups low-sodium chicken broth
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 2 cups frozen corn, thawed
  • 1/4 cup plus 2 tablespoons minced fresh cilantro leaves
  • 2 tablespoons juice from 1 lime
  • 18 (6-inch) corn tortillas
  • Vegetable oil spray
  • 12 ounces Colby Jack cheese, shredded (3 cups)
