• 6 (about 1.8 kg) eggplants (aubergines)
• 4 tablespoons olive oil
• 100g Parmigiano, grated
• 500g mozzarella, thinly sliced
• 1½ tablespoons dried oregano
• sea salt and cracked black pepper
• 2 x 400g tins whole peeled tomatoes
• 2½ tablespoons olive oil
• 2 cloves garlic, finely chopped
