I was looking for a great recipe for eggplants as I had 2 beautiful large on hand (but you can use 2 medium size). I came across this recipe which got my attent

Ingredients
- 2 medium - eggplants
- 1 pound(s) ground beef or lamb ( which i used)
- 1 onion, chopped
- 3 tablespoon(s) chopped bell pepper
- 1 clove(s) garlic, crushed
- 2 tablespoon(s) butter
- 2 1/2 cup(s) canned tomatoes w/ juice
- 1/2 cup(s) long grain rice
- 1 teaspoon(s) salt
- dash(es) black pepper
- 1/2 cup(s) chopped fresh parsley ( i used dry)
- 1 cup(s) soft bread crumbs
- 3 tablespoon(s) butter, melted
- 1 cup(s) grated romano cheese ( also use some feta if you like feta)
- 1 cup(s) water
