Ingredients

• 1 pound beef, ground, 90% lean (or ground turkey, chicken or pork) See Recipe Tips
• 1 tablespoon olive oil
• 1 medium onion, diced
• 1 clove garlic, minced
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
• 6 cups water (or low sodium broth)
• 1 14.5-ounce can diced tomatoes, low sodium (or stewed tomatoes)
• 1 14.5-ounce can hominy, drained and rinsed
• 1/4 cup cilantro, chopped
