Indonesian Meatball Noodle Soup (Bakso)

Ingredients

• 1.5L beef stock
• 1 onion
• 2 stalks spring onion
• 2.5cm knob ginger, sliced
• 2 cloves garlic
• 1 star anise
• 1 cinnamon stick
• Salt to taste
• 300g minced beef
• 40g tapioca/corn starch
• 2 tsp minced garlic
• ½ tsp salt
• ¼ tsp white pepper
• ¼ tsp baking powder
• 2-3 ice cubes
• 2 portions egg noodles
• 1 cup bean sprouts
• 1 stalk bok choy, cut into half
• Fried shallots
• Chopped spring onions
• Sambal Soto* (optional, see note)
