Rustic Greek Rouge Beef Stew

Ingredients

• 1 large cinnamon stick
• 1 bay leaf
• 3 tablespoons olive oil
• 1/4 teaspoon ground cloves
• 2 tablespoons flat leaf parsley, chopped
• 1/4 teaspoon ground black pepper
• 1 can (14-oz) chopped tomatoes in juice
• 1/2 cup red wine
• 5 shallots, finely chopped
• 1 tablespoon granulated sugar
• 3 garlic cloves, minced
• 1 teaspoon salt
• 4 tablespoons tomato paste
• 1 cup beef stock
• 3 pounds cubed stewing beef
• Cooked basmati rice or mashed potatoes, for serving
