Ingredients

• 2 1/4 pounds cubed beaver meat-
• 1/2 teaspoon black pepper
• 1 1/2 teaspoons garlic powder, divided
• 1/2 cup canola oil, divided
• 1 cup all-purpose flour
• 2 bell peppers, diced
• 2 ribs celery, diced
• 2 medium white onions, diced
• 12 ounces turkey smoked sausage, sliced
• 1 tablespoon Creole seasoning
• 2 bay leaves
• 1 6-ounce can no-salt­added tomato paste
• 1 quart reduced-sodium chicken stock
• 2 quarts water
