- 6 to 9 tortillas
- ½ cup fresh coriander
- 1 cup grated tasty cheddar cheese
- an extra jalapeño
- 4 red chillies
- 200g chipotle chillis in Adobo sauce
- 4 Tbsp white wine vinegar
- 1½ tsp dried oregano
- 1 tsp ground cumin
- 4 garlic cloves
- ½ tsp smoked paprika
- 2 Tbsp extra virgin olive oil
- 2 avocados
- 1 Tbsp Greek style yoghurt
- 1 Tbsp lime juice
- 2 jalapeño
- 3 Tbsp fresh coriander
