Ingredients

• 1 pound (450g) Irish sausages (bangers)
• 8 slices thick-cut bacon, chopped
• 1 pound (450g) potatoes, peeled and sliced thickly
• 2 large onions, sliced
• 2 cloves garlic, minced
• 2 cups (480ml) chicken or beef stock
• 1 cup (240ml) water
• 1/2 teaspoon dried thyme
• 1/2 teaspoon black pepper
• 2 tablespoons fresh parsley, chopped (optional)
• Salt to taste
