Ingredients
- 24 thick asparagus spears
- 200g Castle Dairies Welsh Salted butter
- 1 medium free-range egg, plus 1 egg yolk
- 2-3 tablespoons of lemon juice, depending on your taste
- 150ml very soft, whipped double cream
- 100g stale breadcrumbs – sourdough or focaccia are best
- 2 tablespoons olive oil
- 1 heaped tablespoon chopped mixed spring herbs
