Picnic Pie — Annabel Langbein – Recipes

Ingredients

• 2 large bunches spinach trimmed and coarsely chopped (about 500g)
• 1 tbsp plain flour to dust pastry
• 450g savoury short pastry or flaky puff pasty (3 sheets)
• 2 boiled potatoes peeled and thinly sliced into rounds
• 75g feta cheese crumbled (optional)
• 10 eggs
• 1/2 cup chopped soft herbs such as parsley, dill, chives
• 1 tsp flaky sea salt
• freshly ground black pepper to taste
• 2 tbsp butter or extra-virgin olive oil
• 2 red onions thinly sliced
• 1/2 tsp salt
