Ingredients
- 2 large bunches spinach trimmed and coarsely chopped (about 500g)
- 1 tbsp plain flour to dust pastry
- 450g savoury short pastry or flaky puff pasty (3 sheets)
- 2 boiled potatoes peeled and thinly sliced into rounds
- 75g feta cheese crumbled (optional)
- 10 eggs
- 1/2 cup chopped soft herbs such as parsley, dill, chives
- 1 tsp flaky sea salt
- freshly ground black pepper to taste
- 2 tbsp butter or extra-virgin olive oil
- 2 red onions thinly sliced
- 1/2 tsp salt
