• 1/3 cup roasted pistachios, chopped
• 1 cup sliced strawberries
• 1 cup watermelon, cubed
• 2 cups diced seedless English or Persian cucumber
• 2 tablespoons chopped mint
• Bibb or red leaf lettuce leaves
• 1/3 cup olive oil
• 2 tablespoons white vinegar
• squeeze of lemon juice
• 1/4 ground pistachios
• salt and pepper
