Ingredients

• 2 large eggplants
• 300 g grape tomatoes
• 3 cloves of garlic
• 4 cm piece of ginger
• 1 tsp ground coriander
• 1 tsp ground cumin
• 1 tsp smoked paprika
• 1/2 tsp cayenne pepper
• 1 can (400 g) diced tomatoes
• 1 can (400 g) cannellini beans
• 1 can (400 g) light coconut milk
• 1 red chili
• 1 bunch of fresh cilantro
• 2 tbsp olive oil
• Salt to taste
