- fresh corn kernels, 1/2 Cup
- fresh cilantro, 1/4 Cup chopped
- chipotle pepper in adobo sauce, 1 Tbsp finely chopped
- extra virgin olive oil, 1 Tbsp
- lime, Juice of one
- salt, to taste
- fat-free Greek yogurt, 1/2 Cup optional
- paprika, 1 Tsp for garnishing
