Poached Pears in Red Wine, Cardamom & Orange - Brennans Market

Ingredients

• 1 750ml bottle dry red wine
• 2 1/4 cups sugar
• 2 cups water
• 1/2 cup orange juice
• 2 teaspoons grated orange peel
• 1 teaspoon ground cardamom
• 1 cinnamon stick
• 4 firm, but ripe pears, peeled, stems left intact
• 1 pint Vanilla ice cream
• 1 plain or almond biscotti, crumbled
• Orange peel strips (optional)
