• zatarain's gumbo base (1/4 cup, optional)
• 32 ounces beef broth (or chicken broth)
• 32 ounces water
• 1 whole tomato (ripe, peeled and chopped)
• 1 1/2 pounds Yukon Gold potatoes (roughly chopped, 4 medium potatoes)
• 1 tablespoon oregano
• 1 tablespoon Italian seasoning
• Salt and pepper, to taste
• 1.5 tablespoons corn starch (or enough to thicken)
