Cooking tools:

  • Skillet
  • Chef's knife
  • Cutting board
  • Mixing bowl
  • Whisk
  • Stove
  • Colander
  • Spoon
  • Measuring cup

Ingredients

  • 1 lb ground chicken (turkey or pork work too, but I prefer the texture of white meat chicken)
  • 1 small red onion (diced)
  • 1 bunch fresh cilantro (chopped)
  • 1 knuckle fresh ginger
  • 1/4 cup dry roasted peanuts (crushed (optional))
  • 8 tablespoons fresh lime juice
  • 8 tablespoons fish sauce
  • 2-8 Thai chilies (finely diced (2 for medium heat, 8 for HOT! Serrano peppers work well too))
  • 1 teaspoon crushed Thai chilies (adds extra flavor; can use only this if fresh chilies aren't available)
