Ingredients

• 1 cup matzo meal
• 4 tbsp. margarine or oil
• 1 onion, chopped
• 1 green pepper, chopped
• 1/2 red pepper, chopped
• 1 stalk celery, chopped
• 1/2 pound mushrooms, sliced
• 1 large zucchini, chopped
• 1 large carrot, shredded
• 1 16-ounce box chopped spinach, defrosted
• 4 eggs, beaten
• 1-1/2 tsp. instant pareve broth mix
• 1/4 tsp. black pepper
• 1 16-ounce can tomato sauce, heated (optional)
