Eggplant Kugel

Ingredients

• 3 tbsp. margarine for the pan
• 1 chopped green pepper
• 1 cup chopped onions
• 1-1/2 cups grated carrots
• 1 small eggplant, cut into 1/2" cubes
• 10 oz. package frozen spinach
• 3 eggs
• 1-/2 tsp. salt
• 1/4 tsp. pepper
• 1-1/4 cups matzo meal
