Ingredients

  • 1 1/2 pounds flank steak, skirt steak, or flap meat
  • 1 bunch fresh cilantro
  • 1 2-inch piece of ginger, peeled and rough chopped
  • 3 cloves garlic, peeled and rough chopped
  • 3 tablespoons sugar
  • 1 teaspoon freshly ground black pepper
  • 1/3 cup Asian fish sauce, such as Red Boat brand
  • 1/3 cup fresh lime juice
  • 1/4 cup soy sauce, preferably low-sodium
  • 2 to 3 heads Boston or Bibb lettuce, separated into leaves, rinsed, and spun dry
  • 1/2 of a hothouse (English) cucumber, very thinly sliced
  • 1 small sweet onion, very thinly sliced
  • 1 pint cherry tomatoes, rinsed and cut in half
  • 1/4 cup fresh mint leaves (1/2 cup if not using basil leaves), plus extra for garnish
  • 1/4 cup fresh Thai or regular basil leaves (optional), plus extra for garnish
  • 1/2 cup coarsely chopped dry-roasted peanuts
