Recipe: Cici's Carrot Cake and Homemade Cream Cheese Icing - Frugal Upstate

Ingredients

• 2 cups flour
• 2 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 2 tsp cinnamon
• 1 1/2 C brown sugar
• 1 C veg oil
• 3 eggs
• 1 tsp vanilla
• 2 C shredded carrot
• 8 oz crushed pineapple (drained)
• Optional: 1 C coconut (1 C Raisings, 1 C chopped nuts)
• 16 oz of Cream Cheese (softened)
• 1/2 C Butter (softened)
• 4 C powdered sugar
