Chipotle Chicken Pasta – Fustini's Oils & Vinegars

Ingredients

• 2 lbs boneless, skinless chicken (breasts, thigh)
• 3 tablespoons of Fustini's Chipotle olive oil, divided
• Kosher salt and freshly ground pepper
• 1/2 teaspoon chili powder
• 1/2 teaspoon ground cumin
• 1/4 cup adobo sauce
• 1 small red onion, thinly sliced
• 2 garlic cloves, crushed
• 1 1/2 cups diced bell peppers (red, orange, green, yellow)
• 1 jalapeno, diced
• 1 pound dried rigatoni pasta
• 1/4 cup + 2 tablespoons Fustini's Jalapeno Lime balsamic, divided
• 2 cups chicken stock
• 16 oz jar black bean and chipotle salsa
• 1/2 cup water if needed
• 1 cup cherry tomatoes, quartered
• 1 tablespoon lime juice
