Esquites

Ingredients

• 1 pound of corn cut off the cob or frozen corn
• 2 tbsp of Kewpie Mayo
• 1/2 tbsp lime juice
• 1/2 white onion, finely diced
• 1/2 tsp Tajín seasoning
• 2 tbsp cilantro, finely chopped (reserve a couple whole leaves for garnish)
• 2 tbsp Cotija cheese
• salt and pepper to taste
