Ingredients

  • 1 Start by sifting the flour and baking powder and set them aside.
  • 2 Then get on with cleaning the ears of corn, peeling the leaves and taking out all the silk that comes with them.
  • 3 Then using a sharp knife, carefully slice the corn kernels off the cob into a large bowl.
  • 4 Take the corn kernels and place them in the blender or food processor and add the milk. Blend them into a smooth pulp and set aside.
  • 5 Cream the butter and the sugar together until they're light and fluffy, about 5 minutes in the stand up mixer.
  • 6 Once they're creamed, add the eggs one at a time and whisk in between.
  • 7 Add the Mixture of blended corn and milk from the blender and mix.
  • 8 Add the sifted flour and baking powder and the vanilla and mix to combine.
