Ingredients

  • 1 pound large sea scallops
  • Salt and pepper, to taste
  • 2 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish (optional)
  • Pat the scallops dry with paper towels. Season both sides of the scallops with salt and pepper.
  • In a large skillet, melt 1 tablespoon of butter and olive oil over medium-high heat until the butter is foamy.
  • Remove the seared scallops from the skillet and transfer them to a plate. Set aside and keep warm.
  • In the same skillet, melt the remaining 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Remove the skillet from the heat and stir in the fresh lemon juice. Season with additional salt and pepper if desired.
  • Arrange the seared scallops on individual serving plates and drizzle the butter sauce over them. Garnish with chopped fresh parsley if desired.
