Chicken Satay | Asian Inspirations
A popular street food in Malaysia, Chicken Satay is often served with a peanut sauce and eaten with rice, onions and cucumbers. Try these grilled skewers!
Ingredients
- 2 tbsp rice bran oil or peanut oil
- 2 lemongrass stalks (white part only; chopped)
- 2 garlic cloves (peeled)
- 2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp chilli powder
- 2 tbsp raw sugar or brown sugar
- 1 tsp salt
- 2 large chicken breast fillets (cut into bite-size pieces)
- 250ml Yeo's Satay Sauce
- ¼ cup TCC Coconut Milk
- 1 small Lebanese cucumber (sliced)
- 1 cup pineapple pieces
- 2 red long chillies
- 1 lime (to serve)
- 1 red onion (to serve)
- Fresh coriander leaves (for garnish)
- 2 cups jasmine rice (to serve)
- Bamboo skewers (soaked in cold water)
