  • 1½ teaspoons. salt, divided
  • ½ teaspoon black pepper
  • 1 medium yellow onion, finely chopped
  • 2 ribs celery, finely chopped
  • 2 large or 3 small bell peppers (colors of choice)
  • 8 oz. sliced baby bella (cremini) mushrooms
  • 4 garlic cloves, minced
  • 2 tablespoons. cajun or creole seasoning
  • 1 teaspoon dried thyme
  • ¼ to ½ teaspoon cayenne pepper (depending on desired level of spice)
  • 1½ cups uncooked long-grain white rice
  • 1 (14-oz.) can crushed tomatoes
  • 3 cups lower-sodium vegetable or chicken broth
  • 1 bay leaf
  • ¼ cup finely chopped fresh parsley leaves or green onion for garnish
  • juice of 1 lemon
  • ½ cup sliced green olives for garnish (optional)
