Ingredients

• 1 ½ lb. round steak, ¾” thick
• Flour for dredging steak (cornstarch or tapioca flour for Gluten Free version)
• 1-2 tsp. salt or to taste
• ½ tsp. black pepper or to taste
• ¼ - ½ tsp. garlic powder
• Olive oil
• 1 medium onion, sliced
• 4 carrots, chopped
• 2 ribs celery, chopped
• ½ green pepper, chopped (optional)
• 1 14oz. can diced tomatoes
• 1 cup low sodium beef broth
• 12 petite Klondike, Yukon or Red gourmet potatoes
