Ingredients

• 1 large eggplant, peeled and cut into, at least eight, 1/2-inch slices
• Salt
• 1 tablespoon olive oil
• Freshly ground black pepper
• 1 teaspoon Italian seasoning
• 3/4 cup purchased marinara sauce
• 2 ounces soft goat cheese, such as Montrachet
• 1 cup coarsely grated mozzarella cheese (about 4 ounces)
• 1/4 cup chopped fresh basil
