Ingredients

  • Thai Beef Soup with Coconut Milk
  • Serves: 4
  • Prep Time: 15 minutes
  • Cook Time: 1.5 to 2 hours
  • Ingredients:
  • 1lb (450g) beef stew meat or sirloin, thinly sliced
  • 1 tosp vegetable oil
  • 2-3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1-2 Thai red chilies, sliced (adjust to heat preference)
  • 1 stalk lemongrass, smashed and chopped into 2-inch pieces
  • 4 cups beef broth
  • 1 can (13.5 oz) coconut milk
  • 2 tosp fish sauce
  • 1 tosp soy sauce
  • 1 tsp brown sugar or palm sugar
  • • 1-2 kaffir lime leaves (optional)
  • • 1 cup mushrooms (shiitake or button), sliced
  • • 1 cup baby bok choy or spinach
  • • Juice of 1 lime
  • • Fresh cilantro, for garnish
  • • Cooked jasmine rice or rice noodles (optional)
  • Instructions:
  • 1. Sear the beef:
  • In a large pot, heat oil over medium-high. Add the beef and sear until browned on all sides.
  • Remove and set aside.
  • 2. Sauté aromatics:
  • In the same pot, reduce heat to medium. Add garlic, ginger, chilies, and lemongrass. Sauté for 1-2 minutes until fragrant.
  • 3. Simmer broth:
  • Add the beef back in, followed by the beef broth. Bring to a boil, reduce heat, and simmer for 1 to 1.5 hours (or until beef is tender).
  • 4. Add coconut milk & seasoning:
  • Stir in the coconut milk, fish sauce, soy sauce, sugar, and kaffir lime leaves. Simmer for another 10-15 minutes.
  • 5. Add vegetables:
  • Add mushrooms and bok choy (or spinach).
  • Cook until tender, about 5 minutes.
  • 6. Finish with lime juice:
  • Add fresh lime juice to balance flavors. Taste and adjust seasoning if needed.
  • 7. Serve:
  • Ladle into bowls, garnish with fresh cilantro.
  • Serve with rice or rice noodles if desired.
