• 6 large shitake mushrooms, thinly sliced
• 1 red torpedo scallion, red and green diced and divided
• 1 clove garlic, minced
• ½ teaspoon winter savory
• ½ bunch kale, stem removed and leaves chopped
• 6 large eggs
• ¼ cup milk
• 1/8 teaspoon crushed red pepper flakes
• 1/2 teaspoon fine sea salt
• Pinch of black pepper
• Grated parmesan cheese, optional
