• 4 Tbsp Celery finely diced
• 2 Tbsp fresh Cilantro chopped
• 1 Tbsp Chives finely chopped
• 3 Tbsp Mayonnaise, add a touch more if the cakes need more binding
• 1 cup Panko Breadcrumbs
• 2 Tbsp Olive Oil
• 4 large Eggs
• 3 large Egg Yolks
• 1 Tbsp Lemon Juice
• 1/2 tsp kosher Salt
• 1/8 tsp Cayenne Pepper
• 8 Tbsp unsalted Butter
