Sausage Stuffing with Kale and Fennel
This Thanksgiving stuffing or “dressing” recipe is made with sautéed sausage, fennel, onion, garlic, apples and kale for a twist on the traditional dish.
Ingredients
- 2½ cups chicken stock
- 2 medium shallots
- 3 cloves garlic
- 2 tablespoons extra-virgin olive oil
- 1 medium Granny Smith apple
- 1 loaf crusty Italian bread
- 2 cups chopped curly kale
- Kosher salt
- 1 medium fennel bulb
- Freshly ground black pepper
- 1 pound hot Italian sausage
- 1 teaspoon grated lemon zest
- 2 tablespoons unsalted butter
