Christmas salads - Danish christmas salads

Ingredients

• 1 . head of red cabbage, approx. 1 kg
• 0,5 dl apple cider vinegar
• 0,25 dl balsamic vinegar
• 1 dl apple juice
• 150 g jam, e.g. blackcurrant or redcurrant
• 1 tsp. coarse salt
• pepper
• 1,5 tbsp cane sugar
• 1 tsp. duck fat, added before serving
