Ingredients

• 2 tablespoons olive oil
• 1 large onion , finely chopped
• 1 red bell pepper , seeded and chopped
• 3 garlic cloves , minced
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 1/4 teaspoon cayenne pepper (optional, for heat)
• 1 can (28 oz) crushed tomatoes or tomato sauce
• Salt and pepper to taste
• 6 large eggs
• 1/4 cup crumbled feta cheese (optional)
• Fresh parsley or cilantro , chopped, for garnish
• Optional: sliced avocado, olives, or fresh basil for serving
