Ingredients

• 1 pound gourmet mushrooms
• 3 tablespoons extra-virgin olive oil
• 1 sweet onion, finely chopped
• 2 garlic cloves, minced
• 1/4 cup tomato paste
• 1 cup Ramazzotti Barbera
• 1 cup veal stock
• 2 bay leaves
• 3 ounces unsalted butter
• Leaves from bunch fresh thyme
• 1/2 bunch fresh flat-leaf parsley, chopped
• Salt and freshly ground pepper, to taste
• Shaved Parmesan cheese for serving
