• 8 pork loin medallions (700g)
• 2 tsps smoked paprika
• 2 cloves garlic, crushed

• 1 cup Polish sauerkraut
• 1 Pink Lady apple, cored, coarsely grated
• 2 stalks celery, thinly sliced
• 1⁄2 small red onion, finely chopped
• 2 tblsps white wine vinegar
• 2 tsps caster sugar
