Veal and Lamb meatballs featuring fresh herbs

Ingredients

• 3 T olive oil
• 1 1/2 white onion , finely diced
• 4 cloves garlic , finely chopped
• 1 lb ground veal
• 1 lb ground lamb
• 2 eggs
• 1 bunch Italian parsley leaves, finely chopped
• 1 T fresh thyme leaves, finely chopped
• 1 t fresh marjoram , finely chopped
• 2 t salt
• 1 t freshly ground pepper
• 2 T tapioca flour
