- 1 tablespoon salt
- 1 teaspoon fresh ground black pepper
- 2 tablespoons corn oil
- 2 tablespoons extra virgin olive oil
- 1 medium onion
- 2 celery stalks
- 1 large carrot
- 1 heaping tablespoon tomato paste
- 1 tablespoon all-purpose flour
- 2 cups cheap red wine (the cheaper the better)
- 2 fresh thyme sprigs
- 2 bay leaves
- 4 cups beef broth or low-sodium chicken broth
- 1 large Vidalia onion or other sweet onion
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 1/3 cup fresh celery leaves
