• 500 g potatoes in small cubes
• 3 leeks in rings – the white part (approx. 375 g)
• ¾ litre vegetable stock
• 100 ml double cream or cooking cream 8% or 15%
• 1 tsp coarse salt
• freshly ground white pepper
• 150 g bacon
• 1 leek, coarsely chopped – the green part (approx. 150 g)
• watercress
• 240 g toasted bread
