Lemon pound cake is a light and lovely teatime treat. Although the cake is cut thickly, the flavour and texture remain wonderfully delicate.
Ingredients
- 335g cake flour
- 5ml (1 tsp) baking powder
- 2,5ml (½ tsp) salt
- 180g soft butter
- 275g castor sugar
- 3 large eggs
- 5ml (1 tsp) vanilla extract
- finely grated zest of 2 lemons
- 125ml (½ cup) milk
- juice of 2 lemons
- 3 lemons, extra
- 220g castor sugar
- 375ml (1½ cups) water
