  • 1 tablespoon vegetable oil
  • 1/2 teaspoon tapioca starch (or tapioca flour)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground White Peppercorn
  • 1 pound boneless, skinless chicken thighs, cut into 3/4-inch cubes
  • 3 tablespoons Shaoxing cooking wine
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon tapioca starch (or tapioca flour)
  • 1 teaspoon sugar
  • 1/2 teaspoon ground Szechuan Pepper
  • 1 cup Thai Chiles
  • 1/2 cup vegetable oil
  • 4 very thin slices fresh ginger
  • 2 garlic cloves, thinly sliced
  • 1/2 cup unsalted dry-roasted peanuts
  • 2 scallions, cut into 1/4-inch pieces
