- 1/2 teaspoon tapioca starch (or tapioca flour)
- 1/4 teaspoon salt
- 1/4 teaspoon ground White Peppercorn
- 1 pound boneless, skinless chicken thighs, cut into 3/4-inch cubes
- 3 tablespoons Shaoxing cooking wine
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon tapioca starch (or tapioca flour)
- 1 teaspoon sugar
- 1/2 teaspoon ground Szechuan Pepper
- 1 cup Thai Chiles
- 1/2 cup vegetable oil
- 4 very thin slices fresh ginger
- 2 garlic cloves, thinly sliced
- 1/2 cup unsalted dry-roasted peanuts
- 2 scallions, cut into 1/4-inch pieces
