Ingredients

• 1 bone-in smoked pork shoulder, about 7 1/2 lb (3.5 kg), rind removed
• 2 onions, chopped
• 2 garlic cloves, chopped
• 2 tbsp (30 ml) olive oil
• 4 cups (1 litre) apricot juice
• 1/2 cup (125 ml) apricot jam
• 1/2 tsp red pepper flakes
• 1/2 tsp ground fennel seeds
