Florentine Lasagna Roll Ups – Fustini's Oils & Vinegars

Ingredients

• 16 lasagna noodles, preferably whole wheat
• 2 teaspoons Fustini's Pesto olive oil
• 1 large onion, finely chopped
• 2 garlic cloves, minced
• 1 1/2 tablespoons flour
• 1 1/2 cups of low-fat milk
• Kosher salt and freshly ground black pepper
• 2 tablespoons Fustini's Parmesan Spice blend
• 1 16 oz container of low-fat cottage cheese
• 1 16 oz package frozen cut leaf spinach, thawed and squeezed dry
• 1/4 cup shredded mozzarella
• 1 large egg
• 1/4 cup grated Parmesan cheese
