Easy Mexican Street Corn Pasta Salad

Ingredients

• 8 ounces of pasta (such as rotini or penne)
• 2 tablespoons of olive oil
• 3 ears of corn, grilled and kernels removed (or 2 cups of canned/frozen corn)
• 1 cup of cherry tomatoes, quartered
• 1/4 cup of red onion, finely chopped
• 1/3 cup of cilantro leaves, chopped
• 1/2 cup of Cotija cheese, crumbled
• 1/4 cup of mayonnaise
• 1/4 cup of sour cream
• 2 tablespoons of lime juice
• 1 teaspoon of chili powder
• Salt
• pepper
• Lime wedges, for garnish (optional)
