• 1 lb fresh asparagus (dry ends snapped off)
• 1/4 cup olive oil
• 4 cloves cloves garlic (minced)
• 1 cup diced onion
• 4 cups fresh spinach (rinsed)
• 1/4 cup parsley (chopped)
• 1 cup walnuts
• 1/2 teaspoon salt
• 1 tablespoon white wine vinegar
• 3 tablespoons water
• 1/2 cup Italian Cheese blend (shredded)
• garnish fresh ground pepper and chopped parsley
