Mediterranean Tofu Sheet Pan Dinner – Blackstone Products

Ingredients

• 1 large block extra-firm tofu, diced
• 1 container new (baby) potatoes, halved
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 container cherry tomatoes: reserve 1 handful and cut the rest in half
• 1 purple onion, sliced
• ½ cup olive oil
• 1 ½ tbsp Greek seasoning
• Juice from 1 lemon
• ½ cup parsley, chopped
• ½ jar sliced kalamata olives
